People have been making charcuterie for millions of years, as making dried meats started as a necessity back when there was no refrigeration, and dried cured charcuterie was mandatory to sustain life. Luckily, it is also delicious. Today, we use charcuterie as the way to make parts of the animal that may be unpleasant, pleasant, and enables us to use the entire animal and not be wasteful.
We are receiving quart after quart of fresh organic blueberries from the farm almost daily. During these hot dry summer days, the blueberry bushes are still performing well while other crops struggled during the drought. Chef Charlie, Pastry Chef Douglas, and our beverage director Andrew have all been busy creating new dishes and drinks to highlight the bounty!
During these dog days of August, we can cool off here at Woods Hill Table with summer's first watermelon. Our new watermelon salad special is everything awesome about summer in one dish. The watermelon came in from Applefield Farm in Stow, and Chef Charlie Foster paired it with habanero yogurt sauce, banana peppers and anise hyssop.
We are excited to have the honor of hosting Donna Morris--Owner of Winderlea Vineyards, for a Wine Takeover at the restaurant this evening. She will be featuring many of her wines, pouring samples, and speaking about her vineyard.
